Ok, Ok, Ok, I know it’s a bit of a late post seeing how “National Pancake Day” was yesterday and all BUT “Lemon Poppy Seed Pancakes” are better late then NEVER! I swear my days are getting away from me more and more and more. I’m sure I’m preaching to the choir here knowing we are all slammed with our daily business and routines. Although, some days just feel a bit more overwhelming then others!
Typically, Tuesday’s here @ www.prettybitchescancooktoo.com “Pretty Bitches Can Cook Too” are built around “Taco Tuesdays” so that made yesterday a Taco Tuesday Takeover! LOL, a pancake hijacking! These pancakes are DELICI-OSO tho! Simple flavors paired up with yogurt and fruit which creates a party in your mouth and is yummy in your tummy!
- 2 Cups of Oat Free Flour
- 1 Cup of Almond Milk
- 2 Eggs
- 1 1/2 tbsp of Poppy Seed
- 1 Fresh Squeezed Lemon
- 2 tbsp of Coconut Palm Nectar or Agave Nectar
- 2 tbsp of Greek Yogurt (your flavor choice)
- 1 tsp of Pure Vanilla
- 1 tsp of Baking Powder
- Pinch of Salt
- Greek Yogurt (your flavor choice)
Pre-heat your skillet to medium heat. Mix pancake ingredients into a bowl and spoon out into your pan flipping once it starts to bubble. Then layer your “Lemon Poppy Seed Pancakes” w/ “Yogurt & Fruit!”
